Moroccan Dry-Cured Beldi

The fruits are often processed through a unique salt-cure method, which yields a robust, salty, and pleasantly bitter olive with notes of ripe fruit. Preserved in oil, it has a wrinkly appearance with a chewy texture similar to sun-dried tomatoes. Try it with a blue cheese, a sharp Cheddar or a strong washed rind.
